In this case, does σπείρω / σπέρνω mean "to ripe", "to come into ear", etc.?

Η πεδιάδα φυτεμένη σιτάρι, όχι σπαρμένη.

My reading of this is that the plain was planted* with wheat, not sown**.

* suggesting it was organized into rows in a precise location.
** suggesting not scattered randomly over a large area.
…possibly even suggesting certain diligence in actually planting the wheat (seeds) into the soil, as opposed to merely tossing them about?

Yes, this was implied when I wrote "organized into rows" as in such cases the seeds are typically planted to a specific depth (deeper than when plainly sown) and evenly spaced. I should have been clearer though as these points wouldn't be that obvious to someone not familiar with agricultural methods, ie. possibly most people.
