To say “The deadline for submitting your application is January 15th.” or “The deadline has expired.” or “There is no deadline.” … the word “προθεσμια” doesn’t quite fit.

“The deadline is strict.”
“Don’t miss the deadline.”

Etc. How would one say that in Greek, please?

One would say λήξη προθεσμίας or προθεσμία depending on the context.
“The deadline for submitting your application is January 15th” = "Η προθεσμία για την υποβολή αίτησης λήγει την 15η Ιανουαρίου"
“The deadline has expired” = "Η προθεσμία έληξε"
“There is no deadline” = "Δεν υπάρχει προθεσμία"

Oh, wow. That's interesting. So "προθεσμια" is like a deadline. Thank you.

Note that the date itself cannot be translated as προθεσμία. Προθεσμία is rather the whole period up to that date, which is the ημερομηνία λήξης της προθεσμίας. It is strictly equivalent to say/write:
- Η προθεσμία λήγει την 15η Ιανουαρίου, or
- Λήξη προθεσμίας: 15 Ιανουαρίου, or
- Προθεσμία: έως και την 15η Ιανουαρίου, or
- Ως ημερομηνία λήξης της προθεσμίας ορίζεται η 15η Ιανουαρίου.
